Sweet potato kumpir with chickpeas :
Ingrédients:
2 sweet potatoes
80g chickpeas (or 160g cooked chickpeas)
1 red onion
1 tomato
Fresh coriander
Ground coriander
Cumin
chilli pepper
Salt pepper
Cantal
Clotted cream
1/2 pomegranate
Soak the chickpeas and cook them for 50 minutes in simmering water.
Slice the onion and sweat it in olive oil with the herbs. Add the chickpeas and coarsely chopped tomato. Let simmer for a few minutes.
Wash the sweet potatoes, wrap them in aluminum foil and cook them for 30 minutes in an oven at 180 ° C.
Open the sweet potatoes in half without removing the two parts and remove part of the flesh.
Mix the flesh with the chickpeas and adjust the seasoning.
Put chickpeas inside the sweet potato and sprinkle with grated cantal. Return to the oven for a few minutes.
Serve with a quenelle of fesh cream, pomegranate seeds and chopped cilantro.
Greek quinoa-bulgur omelet
Ingrédients :
180g quinoa-bulgur
100g of feta
15 to 20 black olives Greek
1/4 bunch of parsley

1 lemon juice
Olive oil
8 eggs
Salt pepper
Cook the quinoa-bulgur mixture for 10 minutes in boiling salted water. Let cool, add the crumbled feta, the olives cut into 4, the chopped parsley, oregano. Season with a vinaigrette made with lemon juice, olive oil, salt and pepper.
Whisk the eggs and season them. Relax with a little milk. Make 4 omelets, avoiding over-coloring. Add Greek bulgur-quinoa and close the omelets. Serve with a cucumber salad for a full meal.
