La veille (ou 12 h), faites tremper les flageolets dans un grand volume d\u2019eau froide.<br \/>&#8211; Le jour m\u00eame, \u00e9gouttez et rincez les flageolets. Faites-les cuire \u00e0 feu doux dans trois fois leur volume d\u2019eau, avec une gousse d\u2019ail et un bouquet garni, pendant environ 1 h 30 \u00e0 partir de l\u2019\u00e9bullition. Salez en fin de cuisson et r\u00e9servez un peu d\u2019eau de cuisson.<br \/>&#8211; \u00c9pluchez les pommes de terre et coupez-les en gros morceaux. Faites-les cuire dans de l\u2019eau sal\u00e9e pendant 20 \u00e0 25 minutes, jusqu\u2019\u00e0 ce qu\u2019elles soient tr\u00e8s tendres.<br \/>&#8211; Pr\u00e9chauffez le four \u00e0 180 \u00b0C. \u00c9talez les noisettes sur une plaque et faites-les griller 8 \u00e0 10 minutes, jusqu\u2019\u00e0 ce qu\u2019elles soient dor\u00e9es et parfum\u00e9es. Laissez-les refroidir, puis frottez-les dans un torchon pour retirer la peau<br \/>&#8211; Concassez grossi\u00e8rement la moiti\u00e9 des noisettes et gardez les autres enti\u00e8res pour la pur\u00e9e. \u00c9mincez finement les oignons.<br \/>&#8211; Dans une po\u00eale, faites chauffer l\u2019huile et le beurre \u00e0 feu moyen-doux. Ajoutez le sucre roux et laissez caram\u00e9liser 2 \u00e0 3 minutes. Versez le vinaigre balsamique et laissez r\u00e9duire environ 5 minutes. Assaisonnez et r\u00e9servez.<br \/>&#8211; Mixez les flageolets, les pommes de terre, les noisettes enti\u00e8res, l\u2019huile d\u2019olive et la cr\u00e8me fra\u00eeche. Ajoutez un peu d\u2019eau de cuisson des flageolets pour obtenir une consistance cr\u00e9meuse et onctueuse. Salez et poivrez.<br \/>&#8211; Dressez la pur\u00e9e dans les assiettes. R\u00e9partissez les oignons caram\u00e9lis\u00e9s sur le dessus et parsemez de noisettes concass\u00e9es.
