How to Rehydrate Dried Morels?



To cook dried morels, follow these steps:

- Rehydrate them by soaking them for 15-20 minutes in simmering water (to dislodge any impurities still present in the morel's cavities)

- Once they have regained a supple texture, remove them with a skimmer (to leave impurities at the bottom of your pan) and treat them as fresh mushrooms.

Feel free to use the rehydration water. After filtering and reducing it, you can use it to moisten your rice (risotto) or enhance the taste of the morel by mixing it with your cream if you want to cook your morels in cream. For this recipe, remember that the longer your morels simmer in the cream, the better they will be. We recommend an hour of cooking in the cream, regularly adding cream and reduced rehydration water.
