Little Sword of the Velay
In a sustainable and reasoned approach to agriculture and to highlight this rustic cereal that has never undergone genetic modification, Sabarot set up a sector which supports more than 300 farmers partners in order to preserve their ancestral know-how and accompany them daily. The Little Sword of the Velay is cultivated by farmers in the Puy-en-Velay basin (High-Loire). It grows on the same soil as the Green Lentil of Puy A.O.P. : la volcanic land of the Velay high plateaus, at more than 800 meters above sea level, which gives the seed a firm, nutrient-rich envelope.
The Little Sword of Velay has a light taste of hazelnut that pleases both young and old. He is said to have "cheap": both crunchy and melty, he holds in his mouth. This consistency gives it real specificity and refinement, allowing it to stand out from other cereals.
