What is the equivalence between dehydrated and rehydrated mushrooms?

The rehydration varies depending on the variety of mushrooms used. In the table below, we explain how much dried mushrooms you need based on the amount of rehydrated mushrooms required.

Simply multiply your quantity of dried mushrooms by its rehydration coefficient, and you will get the actual amount of mushrooms ready to cook.

Type of Mushrooms Rehydration Coefficient Dried Mushrooms Rehydrated Mushrooms
Porcini 3/3.5 30g Between 90g and 105g
Morels 3/3.2 30g Between 90g and 96g
Boletes and Porcini 3/3.5 30g Between 90g and 105g
Forest Mix 5 30g 150g
Black Mushrooms 8 30g 240g
Chanterelles (it is preferable to slice them before rehydrating to improve rehydration) 2/2.5 30g Between 60g and 75g
Shiitake 3/3.5 30g Between 90g and 105g
Oyster Mushrooms 3 30g 90g
