What is the equivalence between dehydrated and rehydrated mushrooms?
The rehydration varies depending on the variety of mushrooms used. In the table below, we explain how much dried mushrooms you need based on the amount of rehydrated mushrooms required.
Simply multiply your quantity of dried mushrooms by its rehydration coefficient, and you will get the actual amount of mushrooms ready to cook.
Type of Mushrooms | Rehydration Coefficient | Dried Mushrooms | Rehydrated Mushrooms |
Porcini | 3/3.5 | 30g | Between 90g and 105g |
Morels | 3/3.2 | 30g | Between 90g and 96g |
Boletes and Porcini | 3/3.5 | 30g | Between 90g and 105g |
Forest Mix | 5 | 30g | 150g |
Black Mushrooms | 8 | 30g | 240g |
Chanterelles (it is preferable to slice them before rehydrating to improve rehydration) | 2/2.5 | 30g | Between 60g and 75g |
Shiitake | 3/3.5 | 30g | Between 90g and 105g |
Oyster Mushrooms | 3 | 30g | 90g |
