Easy to prepare, the lentils blondes lend themselves to all kinds of dishes: soups, salads, verrines, purées, or simply as a side vegetable. The history of lentils goes back to the Neolithic period. They were much larger than they are today and were already part of the diet of Egyptians, Greeks, and Romans.
