After a significant rise in popularity in the 1940s, the blonde lentil from St Flour disappeared from the shelves until 1997. Thanks to the efforts of a group of farmers, this small-sized lentil, with a pale rosy blonde color and a sweet flavor, began to be produced again and is now available on store shelves and featured on many chefs' menus.
