What is Freekeh?
Freekeh is a variety of Durum Wheat, harvested before maturity and dubbed "green wheat." The harvested ears are then lightly burned in their husk to stop grain germination, then dried in the sun.
The grains can be whole or crushed.
Freekeh is very tender, with a fairly sweet flavor and a slight smoky taste.
Widely used in oriental cuisine for millennia, freekeh is part of many savory or sweet recipes. It can replace bulgur, rice, or quinoa in most recipes.
It is rich in fiber and protein. It has a good content of iron, zinc, potassium, and calcium.
