What is Freekeh?
Freekeh is a variety of Durum Wheat, harvested before maturity and nicknamed "green wheat." The harvested ears are then lightly burned in their husk to stop the germination of the grains, and then dried in the sun.
The grains can be whole or cracked.
Freekeh is very tender, with a rather sweet flavor and a slight smoky taste.
Widely used in Eastern cuisine for millennia, freekeh is part of many savory or sweet recipes. It can replace bulgur, rice, or quinoa in most recipes.
