How to Cook and Rehydrate Dried Mushrooms?
Cook dried mushrooms in 3 steps:
- Rehydrate the mushrooms by soaking them in water. Leave them for 30 minutes to 1 hour in lukewarm water.
- Once they have regained a soft texture, retrieve them with a skimmer (so that impurities or dirt remain at the bottom of the pot).
- Cook them as you would fresh mushrooms.
Feel free to use the rehydration water. After filtering, you can use it to cook your pasta, moisten your rice (risotto), or after reduction, use it as a base for white sauce, or enhance the mushroom flavor by mixing it with cream.
