Fregola sarda is a small pasta typical of Sardinia (Italy). Its name means "little crumb." It is produced artisanally.
It is a mix of durum wheat semolina and water, rolled, then dried at a low temperature and traditionally toasted in old copper cauldrons.
To best enjoy its inimitable toasted bread flavor, the "pilaf" cooking method (like a risotto, moistening with broth, white wine, and finishing by adding grated Parmesan) is most suitable.
