The Sabarot cardoons are deliciously easy to use. You only need to drain them before cooking for about thirty minutes in salted water, then use them to make delicious gratins with or without marrow in the Lyon style.
Cardoons, water, salt, acidifier: citric acid, antioxidant: ascorbic acid
Drain and cook for 30 minutes in salted water. Drain again then arrange.
