How to Cook Split Peas?
To cook split peas, simply follow these 2 steps:
- Blanch them by plunging them into cold water and bringing the water to a boil. Never put them directly into hot or boiling water as this can prolong the cooking time.
- Rinse them, change the water, and cook them for another half hour after boiling.
Split peas are delicious in purée or soup.
Be careful, when cooking all dried legumes, you should only add salt at the end of cooking to avoid hardening the legume.
