How to Cook Lentils?

To cook lentils, simply follow these 3 steps:

- First, rinse them

- Cook them by placing them in cold water and bringing the water to a boil. Never put them directly into hot or boiling water, as this will extend the cooking time.

- Once the water is boiling, let them simmer: 15 minutes for beluga lentils, 20 minutes for Puy green lentils, 25 minutes for green, blonde, or brown lentils. For coral lentils, cook for 4 minutes for a salad or 9 minutes for a soup or puree.

Lentils will be more digestible if you add herbs (onions, cloves, bay leaves, thyme...) to your cooking water and if you cook them long enough to be tender.

You can also cook lentils by absorption. This will allow you to better control the cooking (for coral lentils, for example) or preserve the color (for beluga lentils).

Be careful, when cooking any dried vegetables, only salt at the end of cooking, or else the legume may harden.
