To Sort Lentils or Not?
Lentil plants are about 30 cm tall. There was a time when lentils had to be sorted from stones before consuming them to avoid losing a tooth. Today, this is no longer necessary. If in the past, they were harvested with a flail, today they are collected with a combine harvester (first sorting). After harvesting, lentils are taken to a packaging center where they are sorted industrially. They go through different sorting stages (combine harvester, mechanical, optical sorting... by machines) to obtain lentils without stones, debris, and of the best possible quality.
To Soak Lentils or Not?
Lentils do not need to be soaked before cooking. Simply rinse them, then place them in cold water and heat them up. It takes about 20 minutes to half an hour of cooking after boiling.
