How to use lentil flour?

For recipes like crepes, bread, cakes, pastries... it is recommended to use it in a mix. In your recipe, simply replace a portion of the indicated flour amount with Green Puy lentil flour. The proportions with wheat flour are: one-third Green Puy lentil flour to two-thirds wheat flour.
If you are using gluten-free flours, then the proportions will be one-third Green Puy lentil flour to one-third rice flour and one-third corn flour, for example.
