Fonio is an ancient grain primarily cultivated in West Africa. Considered one of the oldest cereals in the world, it is both flavorful, nutritious, and environmentally friendly. Its subtle taste and light texture make it a preferred choice for various dishes. It can be prepared in both savory and sweet versions and allows you to diversify meals as it can replace rice, quinoa, or other cereals. With its delicate nutty flavor, fonio perfectly integrates into all recipes, appealing to both young and old alike. Fonio also has numerous health benefits: gluten-free, rich in fiber and nutrients, it checks all the boxes.

Cook for 3 minutes and let stand covered for 10 minutes. Or cook for 5 minutes. Fluff with a fork. Fonio can be steamed or roasted with a little oil for 3 minutes, adding salted water gradually (like risotto). When all the water is absorbed, cook for a few more minutes. Stir with a fork.
