A cousin of bulgur, the smoked green wheat called Freekeh is wheat harvested before maturity and burned in its husk. It is very tender with a fairly sweet flavor and a slight smoky taste. Widely used in oriental cuisine for millennia, it is part of many savory or sweet recipes.
